2 tablespoons unsalted butter

1 teaspoon vanilla extract

Fresh raspberries or strawberries (optional)

Instructions

Prepare the Oven and Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper for easy removal.

Mix the Dry Ingredients: In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Combine Wet Ingredients: In another bowl, whisk together the eggs, milk, oil, and vanilla extract until well combined.

Combine Wet and Dry Mixtures: Gradually add the wet ingredients to the dry ingredients, mixing on medium speed until incorporated. Be careful not to overmix. Then, slowly stir in the boiling water – the batter will be thin, which is exactly what you want.

Bake the Cakes: Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Once done, let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

Prepare the Chocolate Ganache: While the cakes cool, heat the heavy cream in a small saucepan over medium heat until it begins to simmer. Remove from heat and add the chopped chocolate and butter, stirring until melted and smooth. Stir in the vanilla extract. Allow it to cool slightly to thicken.

Frost the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of the ganache on top. Carefully place the second layer on top and frost the top and sides of the cake with the remaining ganache.

Decorate: Top with chocolate shavings or curls and fresh raspberries/strawberries for a pop of color and flavor.

Serve: Slice and serve this sumptuous cake to your chocolate-loving friends and family!
