1 cup dark chocolate chips (70% cacao or higher)

1/2 cup heavy cream

1/4 cup fresh raspberries, pureed

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup cocoa powder (for rolling)

1/2 cup crushed freeze-dried raspberries (for rolling, optional)

Instructions
 

Prep the Chocolate: In a medium, heatproof bowl, combine the dark chocolate chips and sea salt. Set aside.

    Heat the Cream: In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat just before it starts boiling.

      Mix with Chocolate: Pour the hot cream over the chocolate chips and let it sit for about 2 minutes. This allows the chocolate chips to melt.

        Add Raspberry Puree: After 2 minutes, stir the mixture until smooth and creamy. Then, add the raspberry puree and vanilla extract. Mix until fully incorporated.

          Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for about 2 hours, or until the mixture is firm enough to scoop.

            Shape the Truffles: Once chilled, use a small cookie scoop or your hands to form the chocolate mixture into small balls (about the size of a walnut).

              Coat the Truffles: Roll each truffle in cocoa powder, and then roll in crushed freeze-dried raspberries for an extra pop of flavor and visual appeal, if desired.

                Set and Serve: Place the truffles on a baking sheet lined with parchment paper. Refrigerate for an additional 30 minutes to set completely. Serve chilled or at room temperature.
