Churro Ice Cream Sandwiches

For the Churros:

1 cup water

1/2 cup unsalted butter

1 tablespoon granulated sugar

1/4 teaspoon salt

1 cup all-purpose flour

3 large eggs

Vegetable oil, for frying

1/2 cup granulated sugar (for coating)

1 teaspoon ground cinnamon

For the Ice Cream Filling:

2 cups vanilla ice cream (or your favorite flavor)

Instructions
 

Prepare the Churro Dough:

    - In a medium saucepan, combine water, butter, sugar, and salt. Bring to a rolling boil over medium heat.

      - Remove from heat and stir in the flour until the mixture forms a ball. Let it cool slightly before adding the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

        Heat the Oil:

          - In a deep skillet or frying pan, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C).

            Pipe the Churros:

              - Transfer the churro dough to a piping bag fitted with a large star tip.

                - Pipe strips of dough directly into the hot oil, cutting them to your desired length with scissors. Fry for about 2-3 minutes per side or until golden brown, then transfer to a paper towel-lined plate.

                  Coat the Churros:

                    - In a shallow bowl, mix together the 1/2 cup granulated sugar and ground cinnamon. Roll the hot churros in the mixture until evenly coated.

                      Assemble the Sandwiches:

                        - Allow the churros to cool slightly, then take two churros and place a generous scoop of ice cream between them. Gently press down to secure the ice cream, forming a sandwich.

                          Serve:
