Ingredients
  

1 cup water

1/2 cup unsalted butter

1 tablespoon sugar

1/4 teaspoon salt

1 cup all-purpose flour

3 large eggs

1 teaspoon vanilla extract

1 cup sugar (for coating)

1 tablespoon ground cinnamon

Vegetable oil (for frying)

Chocolate sauce (for dipping)

Instructions
 

In a medium saucepan, bring the water, butter, sugar, and salt to a boil over medium heat.

    Once boiling, remove from heat and quickly stir in the flour until a smooth dough forms.

      Allow the dough to cool for about 5 minutes, then add the eggs one at a time, mixing well after each addition. Incorporate the vanilla extract until fully combined.

        Heat vegetable oil in a deep fryer or large heavy pot to 350°F (175°C).

          Transfer the dough to a piping bag fitted with a large star tip. Pipe small circular shapes (about 1 inch in diameter) directly into the hot oil, frying a few at a time to avoid overcrowding.

            Fry the churro poppers for about 2-3 minutes on each side until they turn golden brown.

              Using a slotted spoon, remove the churros from the oil and let them drain on paper towels.

                In a separate bowl, combine the sugar and cinnamon. While the churros are still warm, roll them in the cinnamon sugar mixture until fully coated.

                  Serve warm with chocolate sauce for dipping.
