Cinnamon Roll French Toast Roll-Ups

6 slices of soft bread (white or whole wheat)

1/4 cup unsalted butter, melted

1/4 cup brown sugar

1 tablespoon ground cinnamon

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract

1/4 cup cream cheese, softened

1/4 cup powdered sugar (for drizzle)

Optional: maple syrup for serving

Instructions
 

Prep the Bread: Start by trimming the crusts off each slice of bread. Use a rolling pin to flatten each slice of bread gently; this will make rolling them easier.

    Make the Filling: In a small bowl, combine the softened cream cheese, powdered sugar, and a pinch of cinnamon. Mix until smooth and creamy.

      Assemble the Roll-Ups: Take a slice of flattened bread and spread about one tablespoon of the cream cheese mixture evenly over it. Roll the bread tightly from one end to the other and secure it with a toothpick if necessary. Repeat with the remaining slices.

        Prepare Cinnamon Sugar Mixture: In a shallow dish, mix the brown sugar and ground cinnamon together. In another bowl, whisk together the eggs, milk, and vanilla extract until well combined.

          Dip and Cook: Heat a non-stick skillet or griddle over medium heat and brush it lightly with melted butter. Dip each roll-up in the egg mixture, coating it well, then roll it in the cinnamon sugar mixture until fully covered.

            Toast the Roll-Ups: Place the roll-ups seam side down on the skillet. Cook for about 2-3 minutes on each side or until they are golden brown and crispy. Remove from the skillet and set aside.

              Make the Drizzle: In a small bowl, mix the remaining powdered sugar with enough milk to create a drizzle consistency.

                Serve: Remove the toothpicks (if used) from the roll-ups, drizzle with the powdered sugar mix, and serve warm with a side of maple syrup if desired!
