Ingredients

For the Cake:

2 cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/2 cup sour cream

2 cups peeled, cored, and diced apples (preferably Granny Smith or Honeycrisp)

For the Cinnamon Sugar Topping:

1/4 cup granulated sugar

1 tbsp ground cinnamon

2 tbsp unsalted butter, melted

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan or line it with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and sugar together until light and fluffy (about 3-4 minutes).

Add Eggs and Vanilla: Beat in the eggs, one at a time, followed by the vanilla extract. Mix until well incorporated.

Combine Wet and Dry Ingredients: Gradually add the flour mixture to the butter mixture, alternating with the sour cream. Begin and end with the flour mixture. Mix until just combined; do not overmix.

Fold in Apples: Gently fold in the diced apples until evenly distributed throughout the batter.

Prepare for Baking: Pour the batter into the prepared baking pan and smooth the top with a spatula.

Make Cinnamon Sugar Topping: In a small bowl, mix together the granulated sugar and ground cinnamon. Drizzle the melted butter over the cake batter in the pan, then sprinkle the cinnamon sugar mixture generously over the top.

Bake the Cake: Place the cake in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and serve warm or at room temperature; it's delicious on its own or with a dollop of whipped cream!
