1 lb (450g) beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced

1 tablespoon all-purpose flour

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1/2 cup sour cream

Salt and pepper to taste

8 oz (225g) egg noodles

Fresh parsley, chopped (for garnish)

Cook the Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef, season with salt and pepper, and sear until browned (about 2-3 minutes). Remove the beef from the skillet and set aside on a plate.

      Sauté Vegetables: In the same skillet, reduce the heat to medium. Add the chopped onion and garlic, cooking until softened (about 3-4 minutes). Add the sliced mushrooms and cook until they release their moisture and become golden brown (about 5-7 minutes).

        Make the Sauce: Sprinkle the flour over the cooked vegetables and stir well to combine. Gradually pour in the beef broth, stirring continuously to avoid lumps. Add the Worcestershire sauce and Dijon mustard, simmering until the sauce thickens (about 5 minutes).

          Finish the Dish: Lower the heat and stir in the sour cream, mixing well. Return the seared beef to the skillet and cook for another 2-3 minutes until heated through. Adjust seasoning with salt and pepper. If the sauce is too thick, use a little reserved pasta water to reach your desired consistency.
