1 pound beef sirloin, thinly sliced

2 tablespoons all-purpose flour

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced (button or cremini)

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon paprika

½ cup sour cream

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Egg noodles or rice (for serving)

Instructions
 

Prepare the Beef: In a mixing bowl, toss the sliced beef with flour, salt, and pepper until evenly coated.

    Sear the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the beef in batches, searing until browned (about 2-3 minutes). Remove the beef and set aside.

      Sauté Veggies: In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion and garlic until fragrant (about 2-3 minutes).

        Cook the Mushrooms: Add the sliced mushrooms to the skillet and cook until they're browned and all their moisture has evaporated (about 5 minutes).

          Deglaze the Pan: Pour in the beef broth, scraping up any browned bits from the bottom of the skillet. Stir in the Worcestershire sauce, Dijon mustard, and paprika.

            Combine Ingredients: Return the beef to the skillet, bringing the mixture to a gentle simmer. Let it cook for about 5-7 minutes until the beef is tender.

              Finish with Sour Cream: Remove the skillet from heat and stir in the sour cream until well combined. Adjust the seasoning with salt and pepper to taste.
