1 pound breakfast sausage, casings removed

6 large eggs

2 cups milk

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

½ teaspoon onion powder

1 cup shredded cheddar cheese

1 cup frozen hash browns, thawed

1 bell pepper, diced (any color)

½ cup chopped green onions

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or olive oil.

    Cook the sausage: In a large skillet over medium heat, add the breakfast sausage. Cook until browned and crumbly, about 5-7 minutes. Drain excess fat and set aside to cool slightly.

      Prepare the egg mixture: In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.

        Combine ingredients: In the greased baking dish, spread the thawed hash browns evenly on the bottom. Layer the cooked sausage evenly on top of the hash browns. Add the diced bell pepper and chopped green onions. Pour the egg mixture over the layers.

          Add cheese: Sprinkle the shredded cheddar cheese on top of the egg mixture.

            Bake: Place the casserole in the preheated oven and bake for 45-50 minutes, or until the eggs are set and the top is golden brown. A knife inserted in the center should come out clean.

              Cool and serve: Allow the casserole to cool for about 10 minutes before slicing. Garnish with fresh parsley if desired. Serve warm and enjoy!
