2 cups fresh cherries, pitted and halved

1 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

1 tablespoon water

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon pure vanilla extract (for whipped cream)

1 package graham crackers (about 14 full sheets)

½ cup unsalted butter, melted

½ teaspoon cinnamon (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Cherry Filling: In a medium saucepan over medium heat, combine the pitted and halved cherries, granulated sugar, lemon juice, and vanilla extract. Cook until the cherries soften and release their juices, about 5-7 minutes.

    Thicken the Cherry Mixture: In a small bowl, mix the cornstarch and water to form a slurry. Slowly add this slurry to the cherry mixture, stirring continuously. Cook for an additional 2-3 minutes until the mixture thickens. Remove from heat and let it cool.

      Make the Graham Cracker Crust: In a food processor, crush the graham crackers until fine. In a mixing bowl, combine the crushed crackers with melted butter and cinnamon (if using). Mix until well combined. Press this mixture into the bottom of a 9-inch pie dish or similar baking dish to form an even crust.

        Prepare the Whipped Cream: In a large mixing bowl, using an electric mixer, beat the heavy whipping cream until it starts to thicken. Gradually add the powdered sugar and vanilla extract, continuing to beat until soft peaks form.

          Assemble Your Dessert: Once the cherry filling has cooled to room temperature, spoon it evenly over the graham cracker crust. Spread a layer of the whipped cream over the cherry filling, smoothing it out with a spatula.

            Chill: Cover the assembled dessert with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the crust to set.

              Serve: Once chilled, slice into squares or serve in portions. Garnish each serving with a sprig of fresh mint, if desired.
