Classic Chicken Pot Pie

1 lb boneless, skinless chicken breasts, diced

1 cup carrots, diced

1 cup peas (fresh or frozen)

1 cup potatoes, peeled and diced

1/2 cup celery, diced

1/2 cup onion, chopped

3 tbsp unsalted butter

1/3 cup all-purpose flour

2 cups chicken broth

1 cup milk

1 tsp dried thyme

1/2 tsp garlic powder

Salt and pepper to taste

1 package (2) pie crusts (store-bought or homemade)

1 egg (for egg wash)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Cook the Chicken: In a large pot or skillet, melt 1 tablespoon of butter over medium heat. Add the diced chicken, seasoning with salt and pepper, and cook until no longer pink, about 5-7 minutes. Remove chicken and set aside.

      Sauté the Vegetables: In the same pot, add the remaining butter. Stir in the onions, carrots, celery, and potatoes. Sauté for about 5-6 minutes, or until the vegetables start to soften.

        Make the Sauce: Sprinkle the flour over the sautéed vegetables and stir well, cooking for another minute. Gradually pour in the chicken broth and milk, stirring continuously to avoid lumps. Add the thyme and garlic powder. Cook until the mixture thickens, about 3-5 minutes.

          Combine & Prepare Filling: Stir the cooked chicken and peas into the sauce. Adjust seasoning with more salt and pepper as needed. Remove the filling from heat and let it cool slightly.

            Assemble the Pie: Roll out one pie crust and fit it into a 9-inch pie dish. Pour in the chicken filling. Cover with the second pie crust, sealing the edges. Cut several slits in the top crust to allow steam to escape. (For a decorative touch, you can create leaves or other designs with scraps from the crust.)

              Egg Wash: Beat the egg in a small bowl and brush it over the top crust to give it a nice golden color while baking.

                Bake: Place the pie in the preheated oven and bake for 30-35 minutes or until the crust is golden brown and filling is bubbling. If the edges brown too quickly, cover them with foil.

                  Cool and Serve: Allow the pie to cool for about 10 minutes before slicing. Serve warm and enjoy the comforting flavors!
