2 cups cooked chicken, shredded

1 cup carrots, diced

1 cup peas (fresh or frozen)

1 cup celery, diced

1 medium onion, chopped

3 cloves garlic, minced

1/3 cup unsalted butter

1/3 cup all-purpose flour

2 cups chicken broth

1 cup milk

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

1 ready-made pie crust (or homemade if preferred)

1 egg, beaten (for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Filling: In a large skillet, melt the butter over medium heat. Add the onions, carrots, and celery, cooking until the vegetables are tender, about 5-7 minutes. Stir in the garlic and cook for an additional minute.

      Make the Sauce: Sprinkle the flour over the sautéed vegetables and stir to combine. Gradually whisk in the chicken broth and milk, ensuring there are no lumps. Cook for 5-10 minutes until the mixture thickens and coats the back of a spoon.

        Add Chicken and Seasoning: Stir in the shredded chicken, peas, thyme, salt, and pepper. Remove from heat and allow to cool slightly.

          Assemble the Pie: Roll out your pie crust if making it from scratch. Place one crust in a 9-inch pie dish. Pour the chicken filling into the crust, then cover with the second pie crust.
