1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

4 (8 oz) packages cream cheese, softened

1 ¼ cups granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

2 tablespoons all-purpose flour

1 lemon, zested and juiced (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Prepare the Crust: In a medium bowl, combine graham cracker crumbs, ⅓ cup sugar, and melted butter. Mix until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and set aside to cool slightly.

      Make the Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add 1 ¼ cups sugar and beat until incorporated.

        Add Eggs: Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

          Incorporate Other Ingredients: Add sour cream, vanilla extract, flour, and the lemon zest and juice (if using). Mix until just blended, scraping the sides of the bowl as needed.

            Bake the Cheesecake: Pour the filling into the cooled crust. Bake in the preheated oven for 1 hour, or until the edges are set but the center still slightly jiggles.

              Cool: Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour to prevent cracking.

                Chill: Remove the cheesecake from the oven and let it cool to room temperature. Once cool, refrigerate for at least 4 hours, or overnight for best results.
