2 medium sweet potatoes (about 1 pound)

1 pre-made pie crust (or homemade if preferred)

3/4 cup granulated sugar

1/2 cup light brown sugar, packed

1/2 cup evaporated milk

1/4 cup butter, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 tablespoon all-purpose flour (optional, for thicker filling)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Wash the sweet potatoes and prick them a few times with a fork. Place them on a baking sheet and roast in the oven for about 45-60 minutes, or until soft. Let them cool slightly, then peel and mash the flesh in a large bowl until smooth.

      Make the Filling: In the bowl of mashed sweet potatoes, add granulated sugar, brown sugar, evaporated milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, salt, and flour (if using). Mix until everything is well combined and smooth.

        Prepare Pie Crust: Roll out your pie crust and fit it into a 9-inch pie dish. Trim any excess crust at the edges and flute as desired.
