1 pre-baked 9-inch pie crust (store-bought or homemade)

2 cups whole milk

1 cup heavy cream

3/4 cup granulated sugar

1/4 cup cornstarch

1/4 teaspoon salt

4 large egg yolks

2 tablespoons unsalted butter

1 tablespoon pure vanilla extract

Optional: Whipped cream and chocolate shavings for topping

Begin by preparing your pie crust if not using a pre-baked one. Preheat your oven to 350°F (175°C) and blind bake the crust until golden brown. Allow it to cool completely.

    In a medium saucepan, combine the whole milk, 1 cup of heavy cream, and sugar. Heat over medium heat until the mixture is steaming but not boiling.

      In a separate bowl, whisk together the cornstarch, salt, and egg yolks until smooth.

        Once the milk mixture is heated, slowly pour a cup of it into the egg yolk mixture while whisking constantly to temper the eggs.

          Gradually return the egg mixture to the saucepan with the remaining milk mixture, stirring continuously over medium heat. Cook until the mixture thickens, about 5-7 minutes.

            Once thickened, remove from heat, and stir in the unsalted butter and vanilla extract until fully incorporated.

              Pour the vanilla custard into the cooled pie crust, smoothing it out evenly. Allow it to cool to room temperature before covering it with plastic wrap and refrigerating for at least 4 hours or overnight.

                Before serving, whip the remaining 1 cup of heavy cream until soft peaks form. Spread or pipe over the top of the pie and garnish with chocolate shavings if desired.
