Cold Sesame Chicken Noodles

200g of thin rice noodles

200g cooked chicken breast, shredded

1 cucumber, julienned

1 carrot, julienned

4 green onions, sliced (white and green parts separated)

1/4 cup sesame paste (tahini can be a substitute)

3 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

2 teaspoons sesame oil

1 teaspoon chili oil (optional, for heat)

Toasted sesame seeds, for garnish

Fresh cilantro or mint, for garnish

Salt and pepper, to taste

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the rice noodles and cook according to package instructions, usually about 4–6 minutes, until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a mixing bowl, whisk together the sesame paste, soy sauce, rice vinegar, honey or maple syrup, sesame oil, and optional chili oil until smooth and well combined. Adjust seasoning with salt and pepper to taste.

      Combine Ingredients: In a large bowl, add the cooled noodles, shredded chicken, julienned cucumber, carrot, and the white parts of the sliced green onions. Pour the sesame sauce over the noodle mixture and toss well until everything is evenly coated.

        Chill: Cover the bowl with plastic wrap or transfer the noodles to an airtight container. Refrigerate for at least 30 minutes to let the flavors meld and to make the noodles nice and cold.

          Serve: Before serving, give the noodles another toss. Top with the green parts of the sliced green onions, toasted sesame seeds, and fresh herbs like cilantro or mint for added freshness.
