Cookie Monster Cake Jars

For the cake:

1 ½ cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup buttermilk

½ cup blue food coloring

For the frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

¼ cup heavy cream

1 teaspoon vanilla extract

½ cup blue food coloring

½ cup crushed chocolate chip cookies for topping

For assembly:

6 small mason jars or dessert cups

Extra chocolate chip cookies for garnish

Optional: edible eyes for decoration

Instructions
 

Prepare the Cake:

    - Preheat the oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.

      - In a bowl, whisk together the flour, baking powder, baking soda, and salt.

        - In a separate mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.

          - Add eggs, one at a time, along with the vanilla extract, mixing well after each addition.

            - Mix in the dry ingredients in three additions, alternating with the buttermilk until well combined. Stir in the blue food coloring until fully mixed.

              - Pour the batter evenly into prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.

                Make the Frosting:

                  - In a large mixing bowl, beat the softened butter on medium speed until creamy.

                    - Gradually add the powdered sugar, alternating with the heavy cream and vanilla extract, mixing until combined and fluffy. Add blue food coloring to achieve the desired Cookie Monster blue color.

                      Assemble the Cake Jars:

                        - Once the cakes are cool, crumble them into small pieces.

                          - In each mason jar, layer crumbled cake, followed by a layer of frosting. Repeat this process until the jars are filled, finishing with a layer of frosting on top.

                            - Sprinkle crushed chocolate chip cookies on top of the frosting layer and add a whole cookie for decoration. Optionally, use edible eyes to give them a whimsical Cookie Monster look!

                              Serve:

                                - Allow the jars to set for about 30 minutes before serving to let the layers settle.
