Cookie Monster Cheesecake

1 ½ cups chocolate cookie crumbs (such as Oreos)

½ cup unsalted butter, melted

2 tablespoons sugar

For the cheesecake filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

½ cup heavy cream

1 ½ cups blue cookie dough (store-bought or homemade)

½ cup mini chocolate chips

For the topping:

1 cup whipped cream

½ cup mini chocolate chips

½ cup blue cookie dough balls (small, for garnish)

Instructions
 

Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine chocolate cookie crumbs, melted butter, and sugar until it's mixed evenly. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove from oven and let cool.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add in granulated sugar and vanilla extract, mixing until well combined.

      Add in the eggs: Beat in the eggs one at a time until just incorporated. Avoid overmixing.

        Incorporate sour cream and heavy cream: Add the sour cream and heavy cream, mixing until smooth. Gently fold in the blue cookie dough and mini chocolate chips until evenly distributed.

          Combine mixtures: Pour the cheesecake filling onto the cooled crust, spreading it evenly.
