1 cup cottage cheese (preferably low-fat)

1/2 cup almond butter (or peanut butter)

1/2 cup honey or maple syrup

1/4 cup unsweetened cocoa powder

1/2 cup oat flour (or ground oats)

1/2 tsp baking powder

1/4 tsp salt

1 tsp vanilla extract

1/4 cup dark chocolate chips (optional, for extra richness)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper for easy removal later.

    Blend the Cottage Cheese: In a food processor or blender, combine the cottage cheese, almond butter, honey (or maple syrup), and vanilla extract. Blend until smooth and creamy, scraping down the sides as needed.

      Combine Dry Ingredients: In a separate bowl, whisk together the cocoa powder, oat flour, baking powder, and salt until evenly mixed.

        Mix Wet and Dry Ingredients: Add the dry mixture to the blended cottage cheese mixture. Stir until just combined. Be careful not to overmix.

          Add Chocolate Chips: If you're using chocolate chips, gently fold them into the batter to distribute evenly.

            Pour and Bake: Pour the batter into the prepared baking pan and spread it out evenly. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean with a few crumbs (not wet batter).
