Crab and Shrimp Seafood Bisque

1 lb fresh crab meat (lump or claw)

1 lb shrimp, peeled and deveined

4 cups seafood stock

1 cup heavy cream

1 medium onion, finely chopped

2 cloves garlic, minced

1 stalk celery, finely chopped

1 carrot, finely chopped

3 tbsp tomato paste

1 tsp Old Bay seasoning

1/2 tsp cayenne pepper (adjust to taste)

2 tbsp olive oil

2 tbsp butter

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion, celery, and carrot. Sauté for about 5-7 minutes until the vegetables are soft and the onion is translucent.

    Add Garlic and Tomato Paste: Stir in the minced garlic and tomato paste, cooking for an additional 2 minutes until fragrant.

      Incorporate the Stock: Pour in the seafood stock and bring to a simmer. Let it cook for about 10 minutes to allow the flavors to meld.

        Season the Broth: Add the Old Bay seasoning, cayenne pepper, salt, and black pepper. Taste and adjust the seasoning as needed.

          Blend the Mixture: Using an immersion blender, carefully blend the mixture until it's mostly smooth, but still retains some texture for a rustic feel. (Alternatively, you can transfer the mixture in batches to a countertop blender; be cautious of hot liquid).

            Add Seafood: Stir in the crab meat and shrimp. Let the bisque simmer gently for another 5-7 minutes until the shrimp is pink and cooked through.

              Finish with Cream: Lower the heat and slowly stir in the heavy cream. Allow the bisque to warm through but do not boil. Adjust the seasoning again if needed.

                Serve: Ladle the bisque into bowls, garnish with fresh parsley, and serve with lemon wedges on the side.
