Ingredients
  

For the cranberry filling:

2 cups fresh or frozen cranberries

1/2 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1/4 teaspoon salt

For the crumble crust:

1 1/2 cups all-purpose flour

1/2 cup rolled oats

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

Instructions
 

Prepare the Cranberry Filling:

    - In a medium saucepan over medium heat, combine the cranberries, granulated sugar, lemon juice, cornstarch, and salt.

      - Cook the mixture while gently stirring until the cranberries pop and the mixture thickens, about 5-7 minutes.

        - Remove from heat and set aside to cool.

          Make the Crumble Base:

            - Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish or line it with parchment paper for easy removal.

              - In a large mixing bowl, combine the flour, rolled oats, brown sugar, baking powder, and salt.

                - Pour in the melted butter and vanilla extract, then stir until the mixture is crumbly and resembles wet sand.

                  Assemble the Bars:

                    - Press half of the crumble mixture firmly into the bottom of the prepared baking dish to form the base.

                      - Spread the cooled cranberry filling evenly over the pressed base.

                        - Sprinkle the remaining crumble mixture over the top, spreading it out evenly.

                          Bake:

                            - Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and firm to the touch.

                              - Remove from the oven and let cool in the baking dish for about 15 minutes, then transfer to a wire rack to cool completely.

                                Serve:

                                  - Once cooled, cut into bars and enjoy! These cranberry crumble bars can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
