4 boneless, skinless chicken breasts

1 cup fresh or frozen cranberries

1/2 cup freshly squeezed orange juice

Zest of 1 orange

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon olive oil

1 teaspoon minced garlic

1 teaspoon fresh ginger, grated (or 1/2 teaspoon ground ginger)

Salt and pepper to taste

Fresh parsley for garnish (optional)

Prepare the Marinade: In a mixing bowl, combine the fresh or frozen cranberries, orange juice, orange zest, honey, soy sauce, minced garlic, and grated ginger. Stir until well mixed.

    Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish. Pour half of the cranberry-orange mixture over the chicken, ensuring they are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Sear the Chicken: Heat the olive oil in a large oven-safe skillet over medium-high heat. Remove the chicken from the marinade (discard the used marinade) and season it with salt and pepper. Once the oil is hot, add the chicken breasts to the skillet. Sear for about 3-4 minutes on each side, until golden brown.

          Bake the Chicken: After searing, pour the reserved cranberry-orange mixture over the chicken. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).

            Glaze and Serve: Once done, remove the skillet from the oven. Spoon some of the cranberry-orange sauce over the chicken breasts for added flavor. Let the chicken rest for 5 minutes, then garnish with fresh parsley if desired, and serve.
