Ingredients

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 cup fresh or frozen cranberries, roughly chopped

1/2 cup pecans, toasted and chopped

1/2 cup powdered sugar (for glaze)

2-3 tbsp milk (for glaze)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easier removal.

Cream Mixture: In a large mixing bowl, beat together the softened cream cheese and butter until smooth and creamy. Add the granulated sugar and continue to beat until light and fluffy.

Combine Wet Ingredients: Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract until fully combined.

Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Combine Mixtures: Gradually add the dry ingredients to the cream cheese mixture, folding gently until just combined. Do not overmix.

Add Cranberries and Pecans: Gently fold in the chopped cranberries and toasted pecans into the batter.

Pour into Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

Bake: Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.

Cool Bread: Once baked, remove from the oven and let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Prepare Glaze: In a small bowl, whisk together the powdered sugar and milk until smooth. Adjust the consistency by adding more milk if necessary.

Finish: Once the bread has cooled, drizzle the glaze over the top, allowing it to set for a few minutes before slicing.
