Ingredients

2 tablespoons olive oil

1 medium onion, diced

3 garlic cloves, minced

1 pound (450g) mushrooms, sliced (preferably cremini or button)

1 teaspoon dried thyme

½ teaspoon dried rosemary

4 cups chicken broth

2 cups cooked chicken, shredded (rotisserie chicken works well)

1 cup heavy cream

2 tablespoons soy sauce

Salt and pepper to taste

½ cup fresh parsley, chopped (for garnish)

Optional: 1 tablespoon lemon juice (for brightness)

Instructions

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and sauté for another minute until fragrant.

Add the Mushrooms: Add the sliced mushrooms to the pot. Cook until they are browned and have released their moisture, about 8-10 minutes, stirring occasionally.

Season the Soup: Sprinkle in the dried thyme, rosemary, salt, and pepper. Stir well to coat the mushrooms evenly with the seasonings.

Pour in the Broth: Gradually pour in the chicken broth while stirring continuously. Bring the mixture to a gentle boil.

Add the Chicken: Reduce the heat to low, and add the shredded chicken to the pot. Let it simmer for about 10 minutes, allowing the flavors to blend.

Make it Creamy: Stir in the heavy cream and soy sauce. Let the soup simmer for another 5-7 minutes, stirring occasionally, until it thickens slightly and is heated through. If using, add the lemon juice at this stage for extra brightness.

Adjust the Seasoning: Taste the soup and adjust the seasoning with more salt and pepper if needed.

Serve: Ladle the soup into bowls and garnish with freshly chopped parsley. Serve hot with crusty bread or crackers on the side.
