Ingredients

8 oz (225 g) pasta (your choice: penne, fusilli, or spaghetti)

2 cups broccoli florets (fresh or frozen)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup vegetable broth

1 cup heavy cream (or plant-based cream for a lighter version)

1 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Salt and pepper to taste

1 teaspoon Italian seasoning (optional)

Red pepper flakes (to taste, optional)

Fresh basil or parsley for garnish

Instructions

Prep the Ingredients: Gather all your ingredients. If using fresh broccoli, cut it into small florets. Mince the garlic and set aside.

Sauté the Garlic: In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

Cook the Pasta: Add the pasta to the pot and pour in the vegetable broth. Bring to a boil, then reduce to a simmer. Cook the pasta according to package instructions, usually about 8-10 minutes.

Add Broccoli: When there are about 4 minutes left on the pasta, add the broccoli florets to the pot. Stir well and continue cooking until the pasta is al dente and the broccoli is tender.

Make it Creamy: Once cooked, reduce the heat to low. Stir in the heavy cream, grated Parmesan cheese, Italian seasoning, salt, and pepper. Mix until the cheese is melted and everything is combined.

Add Spice and Serve: Taste and adjust seasoning, adding red pepper flakes for heat if desired. Remove from heat and let sit for a minute to thicken slightly.

Garnish and Enjoy: Serve the creamy broccoli pasta warm, garnished with fresh basil or parsley and a sprinkle of extra Parmesan if you like!
