Ingredients

12 oz penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

2 teaspoons Cajun seasoning (adjust to taste)

Salt and black pepper, to taste

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or yellow), sliced

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup chicken broth

1 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with Cajun seasoning, salt, and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Sauté Vegetables: In the same skillet, add the chopped onion and sliced bell pepper. Sauté for about 3-4 minutes or until the onion is translucent. Add the minced garlic and cherry tomatoes, and cook for an additional 2-3 minutes.

Make the Sauce: Pour in the heavy cream and chicken broth, stirring well to combine. Bring the mixture to a gentle simmer, then reduce the heat. Stir in the grated Parmesan cheese until melted and the sauce is creamy.

Combine Pasta and Chicken: Return the cooked chicken to the skillet along with the drained pasta. Toss everything together until the pasta is evenly coated with the sauce. Cook for an additional 2-3 minutes until heated through.

Garnish and Serve: Remove from heat, garnish with fresh chopped parsley, and serve immediately. Enjoy your creamy, spicy Cajun chicken pasta!
