Creamy Cajun Chicken Pasta Bake

8 oz penne pasta

1 lb boneless, skinless chicken breasts, diced

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 can (14.5 oz) diced tomatoes, drained

1 cup heavy cream

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Prepare the Chicken: In a large skillet over medium heat, add olive oil. Season the diced chicken with Cajun seasoning, salt, and pepper. Sauté the chicken until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the diced onion and cook until translucent, about 3 minutes. Add the minced garlic, red bell pepper, and green bell pepper, and sauté for another 3-4 minutes until they soften.

          Combine Ingredients: Return the cooked chicken to the skillet. Add the drained diced tomatoes and heavy cream. Stir everything together, letting it cook for an additional 2-3 minutes to combine the flavors. Season with more Cajun seasoning, salt, and pepper if necessary.

            Mix with Pasta: In a large mixing bowl, combine the cooked penne pasta with the chicken and vegetable mixture. Gently fold in half of the mozzarella and Parmesan cheese.

              Assemble the Bake: Transfer the pasta mixture into a greased 9x13 inch baking dish, spreading it evenly. Top with the remaining mozzarella and Parmesan cheese.

                Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the top is lightly golden.

                  Serve and Garnish: Remove from the oven, let it cool for a few minutes, and garnish with freshly chopped parsley before serving.
