Creamy Cauliflower Soup

1 large head of cauliflower, chopped into florets

1 medium onion, diced

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream or coconut milk

2 tablespoons olive oil

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

½ teaspoon nutmeg (optional)

¼ cup grated Parmesan cheese (optional for garnish)

Fresh chives or parsley for garnish

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until translucent. Add the minced garlic and continue to cook for an additional minute until fragrant.

    Add Cauliflower: Stir in the chopped cauliflower and cook for another 5 minutes, allowing it to mix with the sautéed onions and garlic.

      Add Broth: Pour in the vegetable or chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let it cook for 20 minutes, or until the cauliflower is tender.

        Blend: Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer the soup in batches to a regular blender and blend until silky, returning it to the pot afterward.

          Make It Creamy: Once the soup is blended to your desired consistency, stir in the heavy cream or coconut milk. Add salt, black pepper, and nutmeg. Heat gently until warmed through, being careful not to boil.

            Serve: Ladle the soup into bowls. Top with grated Parmesan cheese (if using) and garnish with fresh chives or parsley.
