Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups button mushrooms, sliced

1 small onion, finely chopped

3 garlic cloves, minced

1 cup chicken broth

1 cup sour cream

2 tablespoons all-purpose flour

2 tablespoons olive oil

2 tablespoons butter

1 teaspoon Dijon mustard

1 teaspoon Worcestershire sauce

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Cooked egg noodles or rice, for serving

Instructions

Prepare the Ingredients: Begin by gathering all your ingredients. Slice the mushrooms, chop the onion, and mince the garlic.

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned on all sides (about 5-7 minutes). Remove the chicken and set aside.

Sauté the Vegetables: In the same skillet, add the butter. Once melted, add the chopped onion and garlic, sautéing for 2-3 minutes until fragrant. Then, add the sliced mushrooms and cook until they are softened and browned (about 5 minutes).

Create the Sauce: Sprinkle the flour over the mushrooms and mix well. Gradually pour in the chicken broth while stirring to avoid lumps. Add the Dijon mustard and Worcestershire sauce, then bring everything to a simmer.

Combine Everything: Once the sauce has thickened slightly (about 3-5 minutes), reduce the heat to low and stir in the sour cream until smooth. Return the cooked chicken to the skillet, coating it with the creamy sauce. Let it cook for an additional 3-4 minutes until everything is heated through.

Serve: Taste and adjust the seasoning with more salt and pepper if needed. Remove from heat and garnish with fresh chopped parsley.

Plate Your Dish: Serve the creamy chicken and mushroom stroganoff over a bed of cooked egg noodles or rice, allowing the sauce to envelop the noodles.
