Creamy Corn & Pesto Pasta

12 oz (340g) pasta (fettuccine or penne work well)

1 cup fresh corn kernels (approx. 2 ears of corn)

1 cup heavy cream

1 cup basil pesto (store-bought or homemade)

2 cloves garlic, minced

1 tablespoon olive oil

½ teaspoon salt (to taste)

¼ teaspoon black pepper (to taste)

½ cup cherry tomatoes, halved

¼ cup grated Parmesan cheese (optional)

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Corn and Garlic: In a large skillet over medium heat, add the olive oil. Once heated, add the minced garlic and sauté for about 1 minute until fragrant.

      Add Corn: Stir in the fresh corn kernels and cook for about 3-4 minutes until tender and lightly golden.

        Prepare Sauce: Reduce the heat to low and pour in the heavy cream, stirring continuously. Add the basil pesto and mix until well combined. Let the mixture simmer for about 2-3 minutes until it thickens slightly.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss gently to combine with the sauce. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.

            Season: Add salt and black pepper to taste. Gently fold in the halved cherry tomatoes for a pop of color and flavor.

              Serve: Plate the creamy corn and pesto pasta and sprinkle with grated Parmesan cheese if desired. Garnish with fresh basil leaves for an aromatic finish.
