Creamy Cowboy Butter Chicken Linguine

For the Chicken:

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tbsp olive oil

Salt and pepper, to taste

1 tsp smoked paprika

1 tsp garlic powder

For the Cowboy Butter Sauce:

1/2 cup unsalted butter (1 stick)

4 cloves garlic, minced

1 tsp onion powder

1 tsp dried thyme

1/2 tsp cayenne pepper (adjust based on spice preference)

2 tbsp fresh parsley, chopped (plus more for garnish)

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 tbsp Worcestershire sauce

Juice of 1/2 lemon

For the Linguine:

8 oz linguine pasta

Salt, for boiling water

Freshly cracked black pepper, to taste

Instructions
 

Cook the Pasta:

    - Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain, reserving a cup of pasta water.

      Prepare the Chicken:

        - In a large skillet over medium heat, warm the olive oil. Season the chicken pieces with salt, pepper, smoked paprika, and garlic powder.

          - Add the chicken to the skillet and sauté for about 6-8 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

            Make the Cowboy Butter Sauce:

              - In the same skillet, reduce the heat to low and add the unsalted butter. Let it melt gently, then stir in the minced garlic, onion powder, thyme, and cayenne pepper. Sauté for 2-3 minutes until fragrant.

                - Pour in the heavy cream, stirring continuously. Add the Worcestershire sauce, fresh parsley, lemon juice, and grated Parmesan cheese. Mix well until the sauce is smooth and creamy. If the sauce is too thick, add some reserved pasta water until you reach the desired consistency.

                  Combine Everything:

                    - Return the cooked chicken to the skillet, mixing it into the sauce. Then add the drained linguine to the skillet, tossing everything together until the pasta is fully coated in the creamy sauce. Adjust seasoning with more salt, pepper, or lemon juice to taste.

                      Serve:

                        - Plate the creamy cowboy butter chicken linguine, garnishing with additional parsley and a sprinkle of Parmesan cheese. Serve warm and enjoy!
