Creamy Crockpot White Chicken Chili

1.5 lbs boneless, skinless chicken breasts

1 medium onion, diced

3 cloves garlic, minced

2 (15 oz) cans cannellini beans, drained and rinsed

1 (15 oz) can corn, drained

4 cups low-sodium chicken broth

2 (4 oz) cans diced green chilies

1 tsp ground cumin

1 tsp chili powder

½ tsp smoked paprika

½ tsp oregano

Salt and pepper, to taste

1 cup heavy cream or coconut cream

1 cup shredded Monterey Jack cheese

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Base: In the bottom of the crockpot, place the boneless chicken breasts and season them with salt, pepper, cumin, chili powder, smoked paprika, and oregano.

    Add Vegetables: Add the diced onion, minced garlic, cannellini beans, corn, and diced green chilies on top of the chicken.

      Add Broth: Pour the chicken broth over all the ingredients, making sure to cover everything well.

        Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easy to shred.

          Shred Chicken: Once cooked, remove the chicken breasts and shred them with two forks. Return the shredded chicken back into the crockpot.

            Incorporate Cream & Cheese: Stir in the heavy cream (or coconut cream) and shredded Monterey Jack cheese. Mix until the cheese is melted and everything is well combined.

              Adjust Seasoning: Taste the chili and adjust seasoning with additional salt, pepper, or spices as needed.

                Serve: Ladle the chili into bowls and garnish with fresh cilantro and lime wedges. Enjoy with tortilla chips or warm bread for dipping!
