Creamy Garlic Butter Salmon Pasta

8 oz (225 g) fettuccine or pasta of choice

2 tablespoons butter

2 tablespoons olive oil

4 cloves garlic, minced

1 lb (450 g) salmon fillet, skin removed

Salt and black pepper to taste

1 cup (240 ml) heavy cream

½ cup (120 ml) chicken or vegetable broth

Zest and juice of 1 lemon

1 cup (100 g) grated Parmesan cheese

¼ cup (15 g) fresh parsley, chopped (for garnish)

Red pepper flakes (optional, for spice)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set aside.

    Prepare the Salmon: While the pasta is cooking, season the salmon fillet with salt and black pepper on both sides.

      Sear the Salmon: In a large skillet, heat the butter and olive oil over medium-high heat. Once the butter is melted and bubbly, add the salmon fillet. Cook for about 4-5 minutes on each side, until the salmon is cooked through and flakes easily with a fork. Remove from the skillet and let it rest on a plate.

        Make the Garlic Butter Sauce: In the same skillet, lower the heat to medium. Add the minced garlic and sauté for about 1 minute, until fragrant (be careful not to burn it!).

          Add the Cream & Broth: Pour in the heavy cream and chicken broth, whisking to combine. Bring the mixture to a gentle simmer.

            Incorporate Lemon & Cheese: Stir in the lemon zest, lemon juice, and grated Parmesan cheese. Keep stirring until the cheese is melted and the sauce is creamy. Adjust the consistency with reserved pasta water if necessary. Season with additional salt and black pepper to taste.

              Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss gently to coat the pasta in the creamy sauce.

                Flake the Salmon: While the pasta is warming in the sauce, flake the cooked salmon into large pieces. Gently fold the salmon into the pasta, being careful not to break the salmon too much.

                  Garnish & Serve: Serve the creamy garlic butter salmon pasta in bowls, garnished with fresh parsley and a sprinkle of red pepper flakes if desired. Enjoy!
