1 lb (450g) boneless, skinless chicken breasts

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup fresh spinach (roughly chopped)

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup grated Parmesan cheese

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Optional: Cooked pasta or rice (for serving)

Instructions
 

Prepare the Chicken: Season the chicken breasts on both sides with salt, pepper, and Italian seasoning.

    Sear the Chicken: In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side until they are golden brown and cooked through (internal temperature should reach 165°F/75°C). Once cooked, remove the chicken from the skillet and set it aside.

      Sauté Garlic: In the same skillet, lower the heat slightly and add the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.

        Make the Creamy Sauce: Pour in the chicken broth and scrape the bottom of the skillet to deglaze. Let it simmer for a couple of minutes. Then, gradually stir in the heavy cream, and bring it to a gentle simmer.

          Add Spinach and Cheese: Stir in the chopped spinach and Parmesan cheese. Continue to cook for an additional 2-3 minutes, allowing the spinach to wilt and the cheese to melt into the sauce.

            Reintroduce the Chicken: Slice the cooked chicken and place it back into the skillet with the creamy sauce. Drizzle lemon juice over the top and allow everything to simmer together for another 2 minutes so the flavors meld.
