Creamy Garlic Mashed Sweet Potatoes

2 large sweet potatoes (about 1.5 lbs), peeled and cubed

4 cloves garlic, minced

1/2 cup heavy cream (or milk for a lighter version)

4 tablespoons unsalted butter

Salt, to taste

Pepper, to taste

1 tablespoon fresh rosemary, chopped (optional)

A pinch of nutmeg (optional)

Chives, for garnish (optional)

Instructions
 

Boil the Sweet Potatoes: In a large pot, add the cubed sweet potatoes and cover them with water. Bring to a boil over medium-high heat. Once boiling, reduce heat to medium and cook for 15-20 minutes or until the sweet potatoes are tender when pierced with a fork.

    Sauté the Garlic: In a small skillet, melt 2 tablespoons of butter over medium heat. Add in the minced garlic and sauté for about 2-3 minutes until fragrant and lightly golden. Remove from heat and set aside.

      Drain and Mash: Once the sweet potatoes are cooked and tender, drain them thoroughly. Return the sweet potatoes to the pot and mash them with a potato masher or fork until smooth.

        Mix in Cream and Butter: Slowly add the heavy cream and the remaining 2 tablespoons of butter to the mashed sweet potatoes. Stir until fully combined and creamy.

          Season the Mash: Stir in the sautéed garlic, salt, pepper, and optional nutmeg and rosemary. Adjust the seasoning to taste, adding more salt or pepper if desired.

            Serve: Transfer the creamy garlic mashed sweet potatoes to a serving dish. Garnish with chopped chives if desired, and enjoy!
