2 tablespoons olive oil

2 boneless, skinless chicken breasts, cubed

Salt and pepper, to taste

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 cup spinach (fresh or frozen)

Fresh basil, for garnish

Optional: red pepper flakes, for heat

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.

    Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the cubed chicken breasts, seasoning with salt and pepper. Cook for about 6-8 minutes, until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, reduce the heat to low and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it. Stir in the heavy cream and allow it to simmer for 2-3 minutes, stirring occasionally.

        Add Parmesan & Seasonings: Gradually whisk in the Parmesan cheese until it melts and the sauce becomes creamy. Add in the Italian seasoning and mix well. If the sauce is too thick, you can add a little reserved pasta water to reach your desired consistency.

          Combine Everything: Return the cooked chicken to the skillet. Add in the spinach and stir until it wilts (if using fresh) or is heated through (if using frozen). Add the cooked pasta, tossing to coat evenly in the creamy sauce. Cook for another minute until everything is warmed through.
