Creamy Garlic Parmesan Chicken Pasta

8 oz fettuccine or pasta of choice

2 boneless, skinless chicken breasts

Salt & pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup chicken broth

1 teaspoon Italian seasoning

½ teaspoon crushed red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set aside.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt and pepper on both sides. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest for a few minutes before slicing.

      Make the Sauce: In the same skillet, reduce the heat to medium-low. Add minced garlic and sauté for about 1 minute until fragrant (do not burn). Pour in the chicken broth, and allow it to simmer for 2-3 minutes, scraping any browned bits from the bottom of the skillet.

        Add Cream and Cheese: Stir in the heavy cream, Italian seasoning, and crushed red pepper flakes if using. Slowly add the Parmesan cheese, whisking until the cheese melts and the sauce is creamy. If the sauce gets too thick, add reserved pasta water gradually until you reach the desired consistency.

          Combine Pasta and Chicken: Add the cooked pasta to the sauce and toss until well-coated. Slice the chicken and arrange it on top of the pasta.
