1 medium spaghetti squash

2 tablespoons olive oil

3 cloves garlic, minced

8 ounces mushrooms, sliced (cremini or button mushrooms work well)

4 cups fresh spinach

1 cup heavy cream (or a dairy-free alternative)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1 teaspoon Italian seasoning

Salt and pepper to taste

Red pepper flakes (optional, for a bit of heat)

Fresh parsley, chopped (for garnish)

Prepare the Spaghetti Squash: Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper. Place cut-side down on a baking sheet lined with parchment paper and roast for about 30-40 minutes or until tender.

    Sauté the Vegetables: While the squash is roasting, heat the remaining olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the sliced mushrooms and Italian seasoning. Cook until the mushrooms are browned and tender, about 5-7 minutes.
