Creamy Mushroom Chicken and Wild Rice Soup

Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, diced

1 cup wild rice, rinsed and drained

8 oz (225g) fresh mushrooms, sliced (preferably a mix of cremini and shiitake)

1 cup chopped onion

2 cloves garlic, minced

1 cup diced carrots

1 cup diced celery

4 cups chicken broth

1 cup heavy cream

2 tbsp olive oil

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper to taste

2 tbsp fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5 minutes, or until the vegetables start to soften.

    Add the minced garlic and sliced mushrooms to the pot, cooking for an additional 3-4 minutes until the mushrooms are tender.

      Stir in the diced chicken breasts, cooking until they are lightly browned on all sides. Season the mixture with thyme, rosemary, salt, and pepper.

        Pour in the chicken broth and bring the mixture to a boil. Once boiling, add the wild rice. Reduce the heat to low, cover, and let simmer for about 40-50 minutes, or until the rice is tender and the chicken is fully cooked.

          Once cooked, stir in the heavy cream and let the soup simmer for an additional 10 minutes to allow the flavors to meld. Adjust the seasoning if needed.
