2 ripe avocados

1 cup mixed mushrooms (cremini, shiitake, and button), cleaned and sliced

2 tablespoons olive oil

1 clove garlic, minced

2 tablespoons cream cheese or vegan cream cheese

1 tablespoon fresh lemon juice

Salt and pepper to taste

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

4 slices of whole grain or sourdough bread

Red pepper flakes (optional, for garnish)

Fresh parsley, chopped (for garnish)

Prepare the Avocado: Cut the ripe avocados in half, remove the pit, and scoop the flesh into a bowl. Add fresh lemon juice, salt, and pepper. Use a fork to mash the avocado to your desired consistency (smooth or chunky). Set aside.

    Cook the Mushrooms: In a medium skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes, stirring occasionally until they are golden brown and tender.

      Add Garlic and Thyme: Once the mushrooms are cooked, add the minced garlic and thyme to the skillet. Cook for an additional 1-2 minutes until the garlic is fragrant. Season with salt and pepper to taste.
