1 medium onion, diced

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup shredded mozzarella cheese

Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Season the chicken thighs with salt and pepper, then add them to the skillet. Sear for about 5-6 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Cook Onions and Garlic: In the same skillet, reduce heat to medium. Add the diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional 30 seconds until fragrant.
