Creamy Spinach Artichoke Quesadillas

2 cups fresh spinach, chopped

1 cup canned artichoke hearts, drained and roughly chopped

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

4 large flour tortillas

2 tablespoons olive oil (for cooking)

Optional: fresh cilantro, for garnish

Instructions
 

Prepare the Filling: In a medium bowl, combine the cream cheese and sour cream. Mix well until smooth. Stir in the chopped spinach, artichokes, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, salt, and black pepper until evenly combined.

    Assemble the Quesadillas: Heat a large skillet over medium heat. Lay one tortilla in the skillet. Spread a little less than half of the spinach and artichoke mixture on one half of the tortilla. Fold the other half over to cover the filling.

      Cook the Quesadillas: Let the quesadilla cook for about 3-4 minutes on one side, or until it’s golden brown and crispy. Carefully flip it over and cook for an additional 3-4 minutes until the other side is also golden brown and the cheese is melted.

        Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining tortillas and filling. You may need to add a little olive oil to the skillet for the next batches.

          Serve: Cut each quesadilla into wedges and serve warm. Garnish with fresh cilantro if desired.
