1 cup orzo pasta

1 tablespoon olive oil

2 cloves garlic, minced

1 medium onion, finely chopped

1 can (14 oz) crushed tomatoes

2 cups vegetable broth

1 cup heavy cream (or coconut milk for a lighter version)

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup fresh spinach

½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Fresh basil leaves, for garnish

Cook the Orzo: In a large pot, bring salted water to a boil and cook the orzo according to package instructions until al dente (about 8-10 minutes). Drain and set aside.

    Sauté the Aromatics: In the same pot, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion becomes translucent, about 3-4 minutes.
