8 oz linguine or spaghetti

2 medium zucchinis, diced

1 pint cherry tomatoes, halved

1 cup heavy cream

½ cup grated Parmesan cheese

2 cloves garlic, minced

2 tbsp olive oil

1 tsp dried oregano

Salt and pepper to taste

Fresh basil, for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.

    Sauté Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.

      Cook Zucchini and Tomatoes: Add the diced zucchini to the skillet and sauté for 4-5 minutes until slightly tender. Then, add the halved cherry tomatoes and cook for an additional 3-4 minutes until they start to soften.

        Make the Creamy Sauce: Lower the heat and pour in the heavy cream. Stir in the Parmesan cheese and oregano. Let the mixture simmer for about 5 minutes, stirring occasionally, until it thickens slightly. Add salt and pepper to taste.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet with the creamy vegetable sauce. Toss until the pasta is well coated, adding reserved pasta water a little at a time if the sauce seems too thick.
