Ingredients

1 pound large shrimp, peeled and deveined

1 cup shredded coconut (sweetened or unsweetened, based on preference)

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Cooking spray

Dipping sauce (such as sweet chili sauce or pineapple salsa)

Instructions

Prepare the Shrimp: Pat the shrimp dry with paper towels to remove excess moisture. This will help achieve that crispy texture.

Setup the Breading Station: In three separate shallow bowls, set up your breading station:

      - In the first bowl, combine the all-purpose flour, garlic powder, paprika, salt, and black pepper.

        - In the second bowl, whisk the eggs until frothy.

          - In the third bowl, mix the shredded coconut and panko breadcrumbs together.

            Bread the Shrimp:

              - Start with the flour mixture: dredge each shrimp in the flour until well coated, shaking off any excess.

                - Next, dip the floured shrimp into the whisked eggs, allowing any excess to drip off.

                  - Finally, press the shrimp into the coconut and panko mixture, ensuring it’s fully coated. Repeat with all shrimp.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

                      Air Fry the Shrimp:

                        - Lightly spray the air fryer basket with cooking spray.

                          - Arrange the breaded shrimp in a single layer in the basket. Ensure they are not overcrowded to allow even cooking (you may need to do this in batches).

                            - Lightly mist the top of the shrimp with cooking spray for extra crispiness.

Cook: Air fry the shrimp at 400°F (200°C) for 8-10 minutes, flipping halfway through, or until they are golden brown and crispy.

Serve: Once cooked, transfer the shrimp to a serving platter. Serve immediately with your choice of dipping sauce for a delightful snacking experience!
