Before diving into the delicious world of coconut shrimp, start with the shrimp itself. The first crucial step is to ensure that your shrimp are properly prepared. Patting the shrimp dry with paper towels is not just a minor detail; it plays a significant role in achieving that coveted crispy texture. Moisture on the surface of the shrimp can lead to steaming rather than frying, which can compromise the crunchiness of your final dish. Taking just a few moments to remove excess moisture will help the breading adhere better and allow the shrimp to crisp up beautifully in the air fryer.

Ingredients

1 pound large shrimp (peeled and deveined, tails on)

1 cup all-purpose flour

2 large eggs, beaten

1 cup shredded unsweetened coconut

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

Cooking spray

Optional: Sweet chili sauce or mango dipping sauce for serving

Instructions

Prepare the Shrimp: Pat the shrimp dry with paper towels to remove excess moisture. This helps the coating stick better and ensures crispiness.

Set Up a Breading Station: In three separate shallow dishes, prepare your breading station. Place the flour in the first dish. In the second dish, pour in the beaten eggs. In the third dish, combine the shredded coconut, panko breadcrumbs, garlic powder, paprika, salt, and black pepper.

Bread the Shrimp: One at a time, dip each shrimp into the flour, coating completely. Shake off any excess flour, then dip it into the beaten eggs to ensure it’s well-coated. Finally, roll the shrimp in the coconut-panko mixture, pressing gently to adhere the coating. Place the breaded shrimp on a plate.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes to ensure even cooking.

Air Fry the Shrimp: Spray the basket of the air fryer lightly with cooking spray. Arrange the breaded shrimp in a single layer, making sure they are not overcrowded. You may need to work in batches depending on the size of your air fryer. Lightly spray the tops of the shrimp with cooking spray.

Cook the Shrimp: Air fry the shrimp at 400°F (200°C) for 8-10 minutes, flipping them halfway through the cooking time, until they are golden brown and crispy. Keep an eye on them to prevent burning.

Serve: Once cooked, remove the shrimp from the air fryer and serve hot with your choice of dipping sauce such as sweet chili sauce or mango dipping sauce. Enjoy your crispy, delicious coconut shrimp!
