1 large eggplant

1 cup all-purpose flour (or gluten-free flour)

2 large eggs

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

Cooking spray or olive oil spray

Optional for serving: marinara sauce, garlic aioli, or ranch dressing

Prepare the Eggplant: Wash the eggplant and cut off the ends. Slice the eggplant into long, thin strips, about 1/4 inch thick, resembling fries.

    Salt the Eggplant: Place the eggplant strips in a colander and generously sprinkle with salt. Let them sit for about 20-30 minutes to draw out excess moisture and bitterness. Rinse under cold water and pat dry with paper towels.

      Set Up the Breading Station: In three separate bowls, prepare your breading ingredients:

        - In the first bowl, place the all-purpose flour.

          - In the second bowl, beat the eggs until well combined.

            - In the third bowl, mix the panko breadcrumbs with garlic powder, onion powder, paprika, salt, and black pepper.

              Bread the Eggplant: Dip each eggplant strip into the flour, shaking off excess, then into the beaten eggs, and finally coat with the seasoned panko breadcrumbs. Ensure each strip is well covered.

                Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

                  Arrange in Air Fryer: Lightly spray the air fryer basket with cooking spray. Place the breaded eggplant fries in a single layer, making sure not to overcrowd them. If necessary, fry in batches.

                    Cook the Eggplant Fries: Spray the tops of the fries lightly with cooking spray. Air fry for about 12-15 minutes, flipping halfway through, or until the fries are golden brown and crispy. Add a bit more time if you want them crispier.

                      Serve: Once cooked, remove the fries from the air fryer and serve them hot with your choice of dipping sauce.
