For the Falafel:

1 cup dry chickpeas (soaked overnight)

1 small onion, roughly chopped

2-3 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 tsp cumin

1 tsp coriander

1/2 tsp baking powder

Salt and pepper, to taste

3 tbsp flour (more if needed)

Cooking spray or olive oil for air frying

For the Pockets:

4 whole wheat pita breads

1 cup cucumber, diced

1 cup tomatoes, diced

1/2 red onion, thinly sliced

1 cup lettuce or mixed greens

Tahini or yogurt sauce for drizzling (optional)

Instructions
 

Prepare the Chickpeas: Drain and rinse the soaked chickpeas. Transfer them to a food processor.

    Blend the Mixture: Add the chopped onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper to the food processor. Pulse until well combined but still slightly coarse. Scrape down the sides as necessary.

      Add Flour: Transfer the mixture to a bowl and add flour. Mix until the mixture holds together. If it's too wet, add more flour until it can be shaped easily.

        Form the Falafel: Shape the mixture into small balls or patties (about 1.5 inches in diameter). Place them on a baking sheet lined with parchment paper.

          Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

            Air Fry the Falafel: Lightly spray or brush the falafel with cooking spray or olive oil. Place them in a single layer in the air fryer basket. Cook for 15 minutes, flipping halfway through, until they are golden brown and crispy.

              Assemble the Pockets: While the falafel is cooking, warm the pita breads lightly in the microwave or on a skillet.

                Fill the Pockets: Once the falafel are cooked, stuff them into the warm pita breads along with diced cucumbers, tomatoes, red onion, and lettuce. Drizzle with tahini or yogurt sauce if desired.
