2 ripe avocados, halved and pitted

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust based on heat preference)

Salt and pepper, to taste

Cooking spray or olive oil for greasing

Optional: Lime wedges and cilantro for garnish

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or a drizzle of olive oil.

    Prepare the Avocados: Cut the avocados into wedges or thick slices (about 1-inch thick). Gently remove the skin and set them aside.

      Set Up Breading Station: In three separate shallow bowls, set up your breading station. In the first bowl, add the all-purpose flour and season with salt and pepper. In the second bowl, whisk the eggs until frothy. In the third bowl, mix the panko breadcrumbs with garlic powder, smoked paprika, cayenne pepper, and additional salt and pepper.

        Coat the Avocado Wedges: Take each avocado wedge and coat it in the flour first, shaking off any excess. Next, dip it into the beaten eggs, allowing the excess to drip off. Finally, place the wedge into the panko mixture, pressing gently to ensure an even coating. Repeat this process for all avocado wedges.

          Arrange and Bake: Place the coated avocado fries in a single layer on the prepared baking sheet. Lightly spray the tops with cooking spray or drizzle with a little olive oil for extra crispiness.

            Bake: Bake in the preheated oven for 15-20 minutes or until the fries are golden brown and crispy. You may want to flip them halfway through for even cooking.
