Ingredients

2 lbs chicken wings

2 tbsp baking powder

1 tsp salt

1 tsp black pepper

1 tsp garlic powder

1 tsp onion powder

½ tsp smoked paprika

½ tsp cayenne pepper (optional for heat)

3 tbsp olive oil

¼ cup unsalted butter, melted

½ cup hot sauce (like Frank's RedHot) or BBQ sauce for glazing

Instructions

Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top. This will help the wings stay crispy.

Prep the wings: Rinse the chicken wings and pat them dry with paper towels. Removing excess moisture is key for crispiness.

Season the wings: In a large mixing bowl, combine the baking powder, salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper. Toss the chicken wings in this spice mixture until they’re evenly coated.

Add olive oil: Drizzle the olive oil over the coated wings and toss again to ensure they’re evenly covered.

Arrange on rack: Place the wings in a single layer on the wire rack. Make sure there’s space between each wing for proper air circulation.

Bake the wings: Bake in the preheated oven for 35-40 minutes or until the wings are golden brown and crispy. Flip them halfway through for even cooking.

Prepare the glaze: While the wings are baking, combine the melted butter and your choice of hot sauce (or BBQ sauce) in a small bowl.

Glaze the wings: Once the wings are done, remove them from the oven and toss them in the sauce mixture until well coated.

Final broil (optional): For an extra crispy finish, set your oven to broil and return the wings to the oven for an additional 2-3 minutes, keeping a close eye to avoid burning.

Serve: Remove the wings from the oven and let them rest for a few minutes before serving. Enjoy with your favorite dipping sauces and celery sticks!
